The Egyptians baked cakes of barley flour, and then soaked them in water, to make them easier to eat. They discovered that the resulting liquid would ferment, and produce a relatively pleasant liquid to drink. Gradually, people learned that barley is better for brewing than for making bread, while wheat is better for making bread, than for brewing. Though, the Bavarian Hefeweizen is just about the best variety of beer that Man has ever brewed, 60% wheat malt and 40% barley malt. Hopfen und Malz, Gott erhalt’s, prost!
