Eel in aspic is also eaten in Germany, especially in the port towns like Bremen and Hamburg.
One way of catching them was to take a cow’s head or horse’s head from the butcher’s, tie a rope to it, and cast it into the surf as bait, then drag it in and harvest the eels.
I don’t know if I’d rather not eat the eel or cow’s head.
